For the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g granulated sugar

To make the Drink (produces 850ml, enough for 10)

400ml decent vodka
100ml London dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch

Directions

Making the Syrup: Place all the components in a pot, heat until it reaches a light boil, agitating so the sugar melts. Then, turn off the stove and leave to cool entirely. Pour into an sterilised bottle, cap it keeping it in the fridge, it can be stored for up to one month.

To make Premix: Combine every spirits and syrup into a big jug, leave to sit for one hour, then strain best through muslin, making it perfectly clear.

To serve: Add 85ml from the batch mix into a mixing glass filled with ice, gently stirring gently for a minute until cold. Pour into a chilled martini glass or similar, top with the cranberries and finish using a brief mist of mandarin oil above the glass.
